Orbisk makes food waste visible in professional kitchens
A large share of all food produced worldwide is thrown away. Dutch company Orbisk wants to change that. Using smart technology, the company helps professional kitchens make food waste visible and reduce it.
Insight into food waste
Orbisk developed a system with a camera and a scale placed near the kitchen waste bin. Using artificial intelligence (AI), the system automatically records how much food is thrown away and which products are involved. This helps kitchens identify where most waste occurs. The system is already being used in hotels, hospitals and catering companies around the world.
More awareness in the kitchen
In addition to providing practical insights, the system also creates greater awareness in the kitchen. Staff can immediately see which products are frequently thrown away, encouraging them to take a more critical look at preparation processes and food waste streams. Ingredients that would previously have ended up in the bin are sometimes given a second life in soups, sauces or broths.
Using food more efficiently
With the collected data, kitchens can purchase more efficiently, adjust portion sizes and manage ingredients more carefully. This not only helps reduce food waste, but can also significantly lower costs. What started as a technical solution has therefore grown into a broader change in the way kitchens deal with food.
